It seems you are under the impression that there are only two genders (male and female) but there are actually many more such as genderqueer, genderneutral, agender, etc. I’d look up the term “gender identities”.

That being said, I hope you understand; pan being all, and bi meaning two. Pan is more inclusive to “all”, I believe that’s the biggest difference, but yes they are very similar, and even I have much to learn about the terminology.
